Stuffed mushrooms
Ingredients:
24 Crimini mushrooms
2 cups of bread crumbs
2 scallions chopped
½ cup each fresh grated Parmesan and Romano cheese
¾ cup dry white wine
¼ cup extra virgin olive oil
6 sprigs fresh parsley chopped
1 clove of garlic finely minced
Salt and Pepper
Preparation:
Get the mushrooms ready, wipe off dirt and remove the stems. Mince the stems up very fine and add to the bread crumb mixture
Mix all the ingredients together. The mixture should look and feel like a course dough that holds together in your hand.
Place the amount of stuffing on the mushroom to equal it's size. The top should be well rounded. Place on a cookie sheet lightly drizzled with olive oil and bake at 350 for 15- 25 minutes
