Macaroni All'Olio
Ingredients:
1 pound angel hair pasta
1 can of anchovies
Fist full of fresh parsley
1 bulb of garlic
¼ cup of extra virgin olive oil
1/8 cup of capers
1 small onion
3 scallions
½ cup white wine
2 ½ cups water
Preparation:
Put on water for pasta. Heat the olive oil on medium high and add the capers and anchovies. Thickly slice the garlic and slice the onion thin, add it to the pan with the olive oil and saute for about one minutes. Add the wine and cook the alcohol out, when the aroma no longer makes your nose tingle, then the alcohol is out. Add the water and gently boil for 5 minutes (on medium heat). Cut up the scallion and parsley. Add it to the mixture just prior to serving. Ladle this over pasta and serve.
