Baccala
Ingredients:
Fish:
1 pound dry salted cod fish
4-6 large cloves of fresh sliced garlic
Juice from 1 lemon
3 tablespoons olive oil
Salad:
Iceberg lettuce or Romaine (crisp)
Pitted black olives
Red vinegar peppers
Preparation:
The salted cod must be soaked for three days, changing the water and rinsing the fish three times a day
On medium to low heat steam the fish with the garlic for approximately 10- 12 minutes, until tender. If the fish is thicker then it should be steamed for approximately 15 minutes.
Add the lemon juice and olive oil and refrigerate for at least one day
Serve over the salad
